Masala Aratikaya Senaga Pappu(Spicy Bengal Gram Dal Raw Banana )



Ingredients :


Aratikaya                                      :      1

Onion                                           :      1 

Green Chilly                                  :     1  

Red Chilly Powder                         :      1 1/2 Tea Spoon

Cloves                                           :       2

Garlic Cloves                                 :      3 (large) 

Ginger                                           :    1 inch piece

Salt                                               :    As per the taste

Coriander Seeds                             :    half tea spoon

Pachi Senaga Pappu (Bengal gram Dal)  :    1 tea spoon

Oil                                                  :     2 1/2 table spoons

Curry leaves                                    :     8 leaves

Corriander leaves                             :    As per taste

Mint leaves                                       :  2-4 leaves

Cinnamon                                          :   very small piece

Dry Coconut                                      :   small piece 

Water                                               :   1/4 glass 

Pre preparations :

Take Bengal gram dal and soak them in water for 10-15 min


Masala Preparation Method :

Take coriander seeds,cinnamon,piece of dry coconut and grind them. And put it a side . 

Take garlic cloves and ginger and make into fine paste and keep it a side .


Curry Preparation Method :


1.   Heat oil in a pan and add chopped onion,green chilly,coriander leaves,curry leaves           and saute them till onion turns golden yellow color.

2 .   Add chopped banana pieces and saute for 5-8 min 

3.    Add Salt and red chilly powder and saute for 1-2 min

4.   Add ginger garlic paste(fresh) and saute it till the raw smell goes off. 

5.   Add  Soaked bengal gram dal and saute for 1 min.

6.   Add water and saute till the water evaporates 

7.   Finally add the masala and curry leaves and saute it then switch off the flame immediately (as you can feel the aroma of dry coconut powder and curry leaves)


Your Spicy and yummy Curry is readyyyyy :) Can be served with rice or roti

Plain Dosa




Plain Dosa :

Dosa recipe is most popular in south India and can be enjoyed with Chutney or Sambhar. 

Ingredients : 

Minapappu (Urad Dal)                            :    1 Cup

Biyyam(Raw Rice)                                 :    2 Cups 

Menthulu( Fenugreek Seeds)                 :    4-6 

Pachi Senagapappu( Bengal Gram Dal)   :    half tea spoon

Salt                                                      :     As per required

Oil                                                        :     For frying



Method for Dosa batter :


1. Soak Minapappu(Urad dal) and Biyyam(raw rice) for 3-4 hours separately .

2 . After 3-4 hours grind dal into smooth consistency by adding enough water  

3. Repeat the same with soaked rice along with soaked fenugreek and bengal gram dal too grind into smooth batter.

4 . Combine both and let it ferment for 7-8 hours . 


Method for Dosa  :

1.  Now once the dosa batter is ready after fermentation add salt to the batter and enough water to get the correct consistency . The batter shouldn't be too watery.

2 .  Heat dosa pan and grease lightly with oil or ghee with help of onion piece. 

3 .  Pour the batter in centre of the pan using laddle or a small bowl and spread the batter using the the same into round shape. Don't spread too thin it should be more or less evenly thick as we are not making crispy dosas.

4 .   Add a little oil or ghee to the edges of dosa and few drops on the top as well.

5 .  Now the edge of dosa starts coming off if you have greased the pan sufficiently , so its time to fold and take it off .

6 . Now you can serve this dosa using Chutney or Sambhar(Madrassy favourite)

Idly Fry



Idly Fry :


Its really a simple and yummy dish . I just tried with one idly but came so yummy . If you are bored of idlis you can try this dish or with leftover idilies .


Ingredients :


Idly                                -       5-6

Oil                                 -       as per required for deep fry

Tomato Ketchup            -       2-3 tea spoons

Method :


1 .   Just take the leftover idlis and cut them as per the shape you desire .

2 .   Take oil for deep fry and just fry the idly pieces

3 .   Your idly fry is ready and you can serve with tomato ketchup or
any chutney u like.



Its a good snack item for kids they do love them to eat .

Gulab Jamun Halwa




Gulab Jamun Halwa

It sounds different but taste is really yummy :) . Its just hit remade recipe . You can try this recipe with your Gulab Jamun recipe itself . Actually i tried it from hard sugar syrup in gulab Jamun(Syrup had come out  very hard as i didnt off the stove on time :( )

But got remade this recipe really yummy than the gulab jamun


Ingredients :

Gulab Jamun                  -   4-5

Sugar Syrup(hard)         -   4-5 spoons

Milk                              -   3/4 glass

cashew nuts roasted     -   4-5 (cut into small pieces)

Ghee                             -    2-3 tea spoons

Elachi powder              -    1/4 tea spoon


Method    :

1.  Take Gulab Jamun and make them into fine paste with the help of spoon.

2.  Take a bowl , add milk and brink it boil and add the fine paste to them .

3.   Slowly add the syrup of gulab jamun . Stir continuously .

4.   Watch the texture if it about to become thick just off the flame and ghee by stirring the mixture.

5.   Add cardamom power and Cashew nut pieces


Your yummy delight is ready . You can have it hot or cool  :)

Gutti vankaya curry -Spicy Stuffed Brinjal Curry


Hey here is the Popular stuffed egg plant curry from andhra :)



Ingredients:

Brinjals (egg plant) - 6-8

Onions -2

Green Chillies -2

Salt - AS per required (Can be scipped if you had added it in while preparing Masala)

Red chilly Powder - 1 Tea spoon

Oil - 2-3 Table spoons

Curry leaves - 6-8

Turmeric powder -1/4 tea spoon

Corriander leaves -For garnishing



Masala (Stuffing) Ingredients :


Cumin Seeds - 1 tea sppon

Coriander seeds - 1 tea spoon

Cinnamon- Small peice

Cloves- 2

Onions - 1

Green Chillies - 2

Red chilly Powder - 1 Tea spoon

Elachi - 2

Biryani Flower- 1-2 cloves

Ginger - small piece

Garlic -6-8 cloves

black pepper seeds -6


Masala Preparation :

1. Take pan and dry roast cumin seeds,coriander seeds cinnamon,cloves,elachi,biryani flower,Black pepper seeds without any oil.( just dry roast them not too much as it may change the taste to bitter)

2 . Take the above fried ingredients let them cool and make a paste out of it by adding onion, chillies,garlic,ginger ,red chilly powder and salt to the mixture(salt can be added here)

3 . Now the masala for stuffing id ready


Curry Preparation :

1 . Wash brinjals and slit them diagonally and Keep them in salted water

2 . Now take the slitted brinjals and neatly stuff the masala

3 . Take a pan and heat oil .

4 . Add cumin seeds and curry leaves and turmeric powder

5 . Add onion pieces and chillies roast till light brown .

6 . Now slowly add the stuffed brinjals .

7 . Close the pan with a lid and let it cook for 4-5 min

8 . Now the add remaining masala paste to it and cook for 5 min

9 . Keep stirring slowly in the middle as it may be stikken to the pan .Add light salt and red chilly powder if required as per your taste.

10 . Once you come to know the brinjals got cooked you can off the stove and take the curry into other bowl and garninsh with corriander leaves

Kobbari Karbuja Pachadi - Coconut Muskmelon Chutney --> With a Twist :)



Hey all  this is my first post .


Bored with routine curry and chutney in your meals and wanna try something different then have a look at this recipe with a twist and you can try it if you like the same .





Ingredients :


Coconut - 1 cup grated or pieces


Muskmelon seeds with some pulp -2- 3 tea spoons

Chillies - 8


Oil - 2 tea spoons


Cinnamon - small piece 


Clove(s) - 1


Mint leaves - 6-8 leaves


Ginger - small Piece


Garlic - 4-6 cloves as per your taste


Cumin seeds - 1/2 tea spoon


Tamarind - a small piece 


Red Chilly Powder - 1/2 tea spoon (Exceptional) 


Salt- As per requirement





Method :


1. Take a pan and add oil. Pour cumin seeds,Cinnamon,clove and chillies .


2. Add mint leaves,ginger,garlic and off the stove don't fry too much as the taste may become bitter.


3. Let them cool and grind the above mixture


4.  Now add the other ingredients coconut,muskmelon seeds with pulp ,tamarind,red chilly powder(exceptional) and salt 


5. Now takeout the chutney in a bowl and garnish with few mint leaves .


You can serve with hot rice along with ghee or with Dosa or Idli
